Roxy’s Best Blueberry/Saskatoon Berry Oat Muffins!
1 c Oats 1 egg – beaten
1 c Buttermilk or sour milk 1/4 c melted butter or margarine
1 c All purpose flour 1 c Blueberries or Saskatoon Berries – fresh or frozen, thawed & well drained
1 tsp baking powder 1/2 tsp baking soda
1/2 tsp salt 3/4 cup lightly packed brown sugar
Combine oats and buttermilk in small bowl. Let stand. Combine flour, baking powder, soda, salt and brown sugar. Stir well to blend. Add egg and melted butter to oat mixture. Mix well. Add oat mixture all at once to dry ingredients. Stir just until all ingredients are moistened. Gently fold in berries. Fill well greased muffin tin or use muffin cups 3/4 full. Bake at 400 degrees for 15 to 22 min. Makes 1 dozen muffins! Please stop in these fantastic stores to get the best things for your home!
